Delicious Victoria Sponge Cake Recipe

This traditional Victoria sandwich cake is a classic British cake that is easy to make and yummy to eat! This recipe makes a delicious Victoria sponge cake that you will want to make for all occasions. It is a great addition to a party or night in.

Ingredients:

200g/8oz caster sugar
200g/8oz butter/margarine
200g/ 8oz self-raising flour
4 eggs
Strawberry or raspberry jam
Icing sugar

Method:

1. Preheat the oven to gas mark 5. Grease two circular trays.
2. Mix the sugar and butter until it is light and fluffy.
3. Whisk the eggs/beat with a fork.
4. Add all of the flour and mix, slowly add the eggs whilst still mixing.
5. Once well mixed, pour the mixture evenly into the trays.
6. Cook in the middle of the oven for 25 minutes.
7. Allow to cool. Once cooled, spread the jam over the bottom of both parts of the cake. Then put one part on top of the other.
8. Sieve icing sugar over the top of the cake.
9. Enjoy!
